Cherry bombs?
I found a recipe on Pinterest that I knew I would have to try out sometime...but I had to make some tweaks because, well...I'm lazy...have a 3 year old that requires almost constant supervision...I'm incredibly OCD so I get ridiculous about things being the way it's "supposed" to be if I'm truly following directions...pick one. For this I'm going with lazy.
Anyway, So the basic idea of this recipe is to bake a devils food cake, destroy it to be able to mix the cake into cake balls with some icing, and cover stemmed cherries then dip them in melted chocolate. YUM!!!
I can't imagine making a cake just to destroy it and then re-mold the crumbs with frosting into cutesy little shapes. I would love to put all that work into it, I just can't see myself doing it. So I decided to buy a big baking pan with 24 tiny muffin/cupcakes. It's a little more rounded than the regular small muffin tins I have, so I figured it would do nicely. I did try to find the cake pop maker and couldn't find one. After I bought my new tin, however, a friend of mine sweetly pointed out to me where I could find one. Oh well...maybe next time!
I forgot to take a pre-baked picture of my cherry bombs, and so it will be pretty hard to tell that there are cherries inside of these, but believe me, there are cherries! I just plopped a cherry down into each little hole and then made sure they were covered with batter so they wouldn't rise to the top instead of staying in the middle where I wanted them! I also plucked each cherry from its stem so these can just be popped in your mouth!
After they cooled I melted some chocolate on the stove and rolled the bottom in it, and then set them on wax paper and then coated the tops.
These don't look nearly as good or as pretty as the original recipe ones, but I'm hoping they will taste just as good as I'm positive the originals are! I can't wait to give them a try once the chocolate hardens :)

They look awesome, and they weren't terrible, but to be honest they weren't my favorite. I think the cake was too moist and maybe needed to be a bit denser for this to have been a better dessert. I will keep tweaking it til I like it. Maybe I will have to actually do as the original baker said and follow her recipe word for word in order to discover the yummiest way to make these!
